Fire cider is one of the great traditions of American folk herbalism — a pungent, spicy, vinegar-based tonic loaded with immune-supporting roots, alliums, and warming spices. This version adds elderberry for an anthocyanin boost and a deeper, more complex flavour profile.
ingredients
- 1/2 cup fresh elderberries (or 1/4 cup dried)
- 1/4 cup fresh ginger root, grated
- 1/4 cup fresh horseradish root, grated
- 1 medium onion, chopped
- 10 cloves garlic, crushed
- 2 jalapeño peppers, sliced
- 1 lemon, zested and juiced
- 2 tablespoons dried rosemary
- 1 tablespoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Raw apple cider vinegar (enough to cover)
- Raw honey to taste (added after straining)
directions
- 1.Add all ingredients except the vinegar and honey to a quart-sized mason jar.
- 2.Pour raw apple cider vinegar over the ingredients until everything is covered by at least two inches. Use a piece of parchment paper under the lid to prevent the vinegar from corroding the metal.
- 3.Shake the jar well. Store in a cool, dark place for 4 weeks, shaking daily or whenever you remember.
- 4.After 4 weeks, strain through cheesecloth into a clean jar. Squeeze the cheesecloth to extract as much liquid as possible.
- 5.Add raw honey to taste — start with 1/4 cup and adjust. Stir until fully dissolved.
- 6.Store in the refrigerator. Take 1–2 tablespoons daily for immune support, or use as a salad dressing base.

The key to a good fire cider is patience. The four-week steep allows the vinegar to fully extract the volatile oils, alkaloids, and minerals from each ingredient. Shortcuts produce a weaker, less effective tonic. Trust the process.
